I'm probably about to try raccoon for the first time here shortly. I've killed lots of them, skinned a couple of them, and even sold one, but I've never eaten one. Gotta remedy that. I was afraid to eat gar for the longest time too. I had heard it was super bony and had a bad taste. Then I tried it, and it was one of the best fish I've had. Who knows what's good til you try it.
