Really as far as sausage goes it is not that unhealthy. What is in boudin? Rice anywhere from 50 to 80% depending on who make it. Next meat old school is always pork, but now you can get it with beef, chicken, shrimp, turkey, crayfish, or even fish. Then Liver, again old school is pork, but now a lot use chicken, but also turkey. Parsley spices. a lot also use onion and garlic.
