I don't think there is a best it's a matter of how low looks good to you. Three inch is fine. You may need to shim the carrier bearing up slightly as lowering will upset the drive shaft angles.

 

BTW welcome to Ratsun, lots of 521s here so feel free to post lots of pictures of yours.

welcome!  I can't wait to see pictures of your 521 !  I  will pass along the same advice I was given about lowering.  get 720 4x4 rear leaf springs.   I am going with a combination of these leaf springs,& 2" lowering blocks.   I am also using a one piece driveline from a 520,so no need to worry about the carrier bearing.

get belltech part # 6202 is a 3inch 2 deg block . 2deg rake is to keep driveline in line with the trans so no tension on that and carrier bearing

 

then go under truck youll see 2 square like BOLTS. there is a jam nut on back side. loosen the jam nut then turn the bolt outward and the torsion bar will lower. get as far as you can with out taking the jam nut off
