It will stop just as fast as a stock 510 if you have tires any wider than the original narrow tires. Stock 510s were tire-limited on braking, they would lock up before maximum force could be applied. Larger brakes will gain fade-free performance , better feel and modulation, but not necessarily stop faster unless you fit more rubber to the road. Ok, what about the NEXT time you step on that brake pedal at the next corner? The stock brakes on a 510 will heat soak at 25 mph on a slight downhill grade- bigger brakes aren't just about braking force, but also the ability to absorb and dissipate heat more effectively. That being said, it sounds like he's already got z brakes for the front, which should help considerably for street use. Digging the SSRs- my vote is for gold- would go nicely with your paint!
