Street vehicles are carefully designed to work best at fairly high temperatures. This is where they run the smoothest, make the best power and torque, give the best mileage and the least wear and emissions. Run with a thermostat it will allow the quickest warmup and prevent over cooling. The radiator and fan will shed any excess heat and prevent over heating. The thermostat's job is to regulate the temp at about what it's rating is. You can run without a thermostat but there's no advantage to it. Your motor won't be running at it's best if you do.
