The factory carburetor is always the best carburetor if running right. Every effort should be made to retain it, even with a rebuild. It's designed to give the best compromise between mileage economy and performance, easy starting and running in all weather. What I call drive-ability.  It fits and works with all the wiring, hoses and connections.

 

Now... if you choose to replace with a Weber perhaps because the original one is beyond repair, you will get an small performance increase but you will have to put up with the loss of some of the conveniences of the stock carb. For example (but not limited to) the loss of the stock air filter with the ATC (auto temp control) that provides warmed air from the hot exhaust in the winter and prevents carb icing and cooler air from in front of the rad in the summer. There is also a sensor for an air bleed to reduce an over rich mixture in the summer heat when under hood temperatures are excessive. All of life is a compromise.
