Consumables like brake shoes, U joints, clutches, belts and hoses, lights, brake masters and slaves, suspension and steering ball joints, seals and bearing are still available at many auto parts stores. Having said that today's rebuilt parts, such as carburetors/fuel pumps/alternators/starters, are... well in a word ... shit. Terrible quality so never throw away old parts and try to source an original used one from a wrecking yard. Sometime you can make a good part from two or more worn out ones. Or try to get original parts made in Japan. These are expensive because bad money drives out good money. People buy cheap Chinese made crap based on cost so good quality parts don't sell and they become harder to find.

A new Nissan dealer L20B brake slave cylinder for a 1980 720 is $59.  What quality are you going to get for $9?

Parts are still available for engine rebuilding. Again try to get Made In Japan for critical parts.

For everything else body, glass, suspension and drive train a wrecking yard is the place to go.
