The stock 60 series 4 speed will probably get you to the crosswalk on the other side of the intersection before it grenades.

 

Geezus, use a 350  turbo-hydromatic that comes with a 350. Cut the floor out if you have to.  All things equal, an automatic will be easier to do, more consistent, more reliable, break fewer parts on the B, and be just plain easier to drive than a standard. You'll have zero problems roasting the tires.

Probably cheaper and easier to cut the floor pan and plant it on an S10 frame.   You'd get bigger brakes, drop in drivetrain install, and easy aftermaket parts availability..

 

Bag it, channel the body over the frame, and go Hella Flush. Don't forget the rear wing and big Fart Can exhaust..
