How to identify a differential?

Assume the diffs are out of the vehicles??? Turn the wheel while someone holds the other. If the driveshaft flange turns but not the other side it's an open diff. If both wheels turn but the same direction then LSD. Very unlikely you'll find an LSD diff.

If you have the complete rear axle assembly you can do like Mike says.

 

Diff? You mean the 3rd-member (pumpkin)? Just look at it, if you can't see the spider gears, it's an LSD:

 

Open diff -- side gears and spider gears visible:
