79 rear end or the 75 that's in it right now?

Shouldn't be any 25-29mm bolts that need breaking to swap rears.

 

The 79 rear axle is supposedly 1.5"s wider than the 75 axle. The 75 makes it easier to tuck your wheels when lowering and gives you a better turning radius. The 79 rear will be minimally more stable.

 

As Mike stated the 79 may have 4:11 gears while the 75 will have 4:375 gears. You could just swap the third member if you want the 4:11 gear ratio and keep your turning radius.

You may need to double wrench those bolts to crack them loose...or a big ass breaker bar.

 

The third member holds the ring and pinion, it's also known as the differential. It's in the center of the axle and the driveshaft is bolted to it at the pinion flange. If you unbolt the axles (4 17 mm bolts per side behind the brake drums) and slide them out a bit, you'll feel the come out of the side gears. Then you can unbolt the third member (about 10 12mm nuts) Then you 'll need to pry it out of the axle housing. It's kind of a heavy pig so be prepared.
